Freezing Apples, Crisp & a Happy Picture
Organic apples were on sale at our local market last week for $1 a pound. I bought 6 pounds of them and froze them for baking. They can be frozen whole but it’s a pain to peel and core them frozen or defrosted. I peel, core and slice them first, then freeze them. They aren’t good raw once they’re frozen but they are great cooked. The only thing is, they give out more liquid than the fresh ones would. I counteract that by adding arrowroot flour to the apples so the juice thickens up instead of being watery. Corn starch is another option but I prefer arrowroot. I use it to thicken gravy too.
The apples in the freezer came in handy today when my daughter called to say she was dropping by this afternoon for a quick visit. I filled an 8×8 baking dish with a mixture of frozen apples, 2T of arrowroot, 1/8 cup sugar and 1 teaspoon of cinnamon. Then I made a quick, standard crisp topping -3/4 cup brown sugar combined with 3/4 cup flour and 2t cinnamon. Add 1/2 cup butter. Cut the butter into the dry ingredients (like making pie crust) until everything is mixed together and crumbly. Scatter this over the apples and bake in a 350 degree oven for 45 minutes or until the apples are tender. *This topping is delicious with pears and peaches too!
By the time my daughter got here, the kitchen smelled like cinnamon and apples. I made some tea and showed her the picture I finished for the nursery I’m planning upstairs. We had the apple crisp warm and I whipped up a little cream to top it off.

It sounds delicious! I had always thought that apple crisp was like the English crumble but I see there is no flour, just butter and sugar? definitely something to try 🙂 xx

oops, just read that again, I was looking at what you added to the apples not the topping. In that case, yes it is like our crumble but I have never added cinnamon, I will give it try with the cinnamon also 🙂 x

Excellent tip about the apples – I love apple crisp – I do a similar recipe but throw some uncooked oatmeal into the crumble mix. And I LOVE the picture! It’s a “Cynthia for kids.” I think the giraffe is off to chase down the little girl’s balloon & return it to her.

Your apples are lovely and my favorite is Apple Crisp. I’ve canned apples all morning and have 28 quarts sealed and ready to go in the cellar.

Sometimes, during life, one sees something absolutely extraordinary and no one else has the opportunity to see it. It is like a gift one receives. There are hundreds of windows where many people could see the giraffe riding by on the bicycle, but only the little girl is present to see the sight. Love it! And, you art is, indeed, happy.

I really like you just from reading your blog. But it’s not always easy – you are too talented!!! I’m jealous!! I absolutely love your painting – fresh, original, sweet, fun, and sassy, all at once. And I’ve printed out your recipe. I’m not a huge apple fan, but many in my family are. It’s worth it to bake just for the smells, and my guy will put a gold crown with diamonds on my head for that dessert. 🙂
